CodFish a Lagareiro

This traditional Portuguese cod dish is a comforting and flavourful recipe, perfect for family meals or special occasions. Combining tender cod loin with crispy smashed potatoes, sautéed greens, and aromatic herbs, this dish delivers a delicious balance of freshness, richness, and authentic Portuguese character.

Preparation

1. Place the cod on a baking tray, drizzle with half of the olive oil, and top with garlic cloves and the bay leaf.
2. Bake in a preheated oven at 220°C / 428°F / Gas Mark 7 for 15–20 minutes, adding a little more olive oil during cooking to keep the cod moist and flavourful.
3. Boil the new potatoes with the skin on for about 10 minutes.
4. Drain and place the potatoes in the oven or under the grill until fully cooked and lightly golden.
5. Sauté onion and garlic in a frying pan, add the potatoes, and gently crush them so they absorb all the flavours.
6. In another pan, sauté the shallots and chilli strips in olive oil.
7. Add the spinach and salt, cooking for about 40 seconds until wilted.
8. Finish with lemon juice, grated fresh ginger, and chopped coriander.
9. Serve immediately alongside the baked cod and smashed potatoes.
