This traditional Portuguese dish of cod with smashed potatoes and vegetables is perfect for any occasion.

Preparation

 

 

Place the cod on a platter, drizzle with half the olive oil and place the garlic and bay leaf on top.

Place the dish in the oven at 220°C/428°F/gas 7 for 15-20 minutes.

Add a little olive oil while the cod is in the oven to keep it juicy and beautiful in color.

Boil new potatoes with the skin on for 10 minutes.

Drain the water and place the potatoes in the oven or grill until they are cooked.

Sauté them in a frying pan with fried onion and garlic and crush them slightly so that they absorb the taste of the onion and garlic.

Fry shallot and chilli strips in olive oil.

Add the spinach and salt and sauté for 40 seconds.

Sprinkle with a little lemon juice, grated ginger and chopped coriander.

• 5cm fresh chilli
