Heart Of Palm Pie

Preparation

Dough

  1. In a bowl or on the counter, mix the flour with the salt. Add the butter and vegetable fat, both chilled and cut into small cubes.
  2. Mix with your fingertips until it forms a crumbly mixture.
  3. Add the egg yolks mixed with the water and mix (without kneading).
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Roll out the dough on 2 plastic sheets or directly in the pan (this dough is extremely soft due to the amount of fat).
  6. Separate 2/3 of the dough and line the bottom and sides of a springform pan (28 cm).

Heart of palm filling

  1. In a pan, sauté the onion in olive oil, add the leek and garlic and sauté a little more.
  2. Add the flour and let it brown slightly.
  3. Add the cream cheese little by little to avoid lumps.
  4. Add the heart of palm, olives, chopped parsley and chives, water (if necessary) and season with salt.
  5. Set aside until lukewarm.
  6. Pour into the dough and cover with the remaining dough.
  7. Brush with 1 beaten egg yolk and bake for approximately 1 hour in a preheated oven at 180ºC.
  8. Serve.

  • 500 g wheat flour (4 teacups)
  • 1 teaspoon salt
  • 125 g unsalted butter
  • 150 g vegetable fat
  • 40 ml water
  • 2 egg yolks
  • 1 egg yolk to brush on top

Heart of palm filling

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 leek, thinly sliced
  • 4 cloves garlic, crushed
  • 2 tablespoons wheat flour (30 g)
  • 400 g catupiry cheese
  • 450 g good quality heart of palm, diced
  • 150 g chopped green olives
  • Parsley leaves and chives to taste
  • 50 ml water
  • Salt to taste
