Dadidinho de Tapioca

Preparation

1. Heat the milk in a saucepan.
2. Once the milk is very hot, turn off the heat, add the grated queijo coalho cheese, and continue stirring.
3. Add the granulated tapioca flour and keep stirring until well combined.
4. Season with salt and white pepper to taste.
5. Stop stirring once all ingredients are fully incorporated.
6. Pour the mixture into a tray lined with cling film, cover the top as well, and refrigerate for about 2 hours.
7. Remove from the fridge, cut into small cubes (“dice”), and fry in hot oil or bake until golden brown.
8. Serve immediately with sweet chilli jam or creamy guava paste.

• 500 g granulated tapioca flour
• 1 litre whole milk
• 500 g grated queijo coalho cheese
• Salt to taste
• White black pepper to taste
• 1 jar sweet chilli jam for serving
