Preparation
- In a large pot, cook the previously washed meats and sausages in salted water.
- As the meats become cooked, remove them from the pot, cut into pieces, and reserve. Keep the cooking broth aside as well.
- Separate the cabbage leaves, wash them thoroughly, and cut them into pieces. Peel the carrots and slice them into thin rounds.
- Lightly cook the cabbage and carrots in salted water. Transfer to cold water and reserve.
- In another pot, sauté the finely chopped garlic and onion in olive oil together with the bay leaf until golden.
- Add the diced peeled tomatoes and tomato paste, allowing the sauce to cook and develop flavour.
- Add the meats, drained beans, and a little of the reserved broth. Simmer for about 10 minutes.
- Add the sliced sausages and cooked cabbage.
- Season with black pepper and allow everything to simmer gently over medium heat.
- Serve accompanied by white rice cooked in the remaining meat broth.
