LEITE DOS FRADES

“Leite dos Frades” is, in fact, a traditional Spanish sweet known for its delicate flavour and creamy texture. This sweet is a conventual dessert, which means it has origins in monasteries and convents, where nuns often created recipes using simple ingredients such as eggs, milk and sugar. The dessert is quite similar to pudding or flan, but with some variations.

 

INGREDIENTS

½ litre of Milk

1 tablespoon of Butter

1 Cinnamon stick

1 pinch of Vanilla

120 g of Sugar

2 Eggs

3 Egg Yolks

60 g Maizena Flour

Sugar and Cinnamon to sprinkle

1 Large Lemon Peel

Flour and egg to involve

 

 

DIRECTIONS

1. Dissolve the Maizena Flour in a little cold milk and bring to boil with the remaining milk, beaten egg yolks, sugar, vanilla, cinnamon stick and lemon peel. Stir continuously until it starts to boil.

2. Let it cook well and thicken. Add a spoonful of butter.

3. Remove from the heat, remove the lemon peel and cinnamon stick and place in a tray to cool. The mixture should be about 1.5 cm high.

4. After cooling (approx. 3 hours), cut the dough into squares about 3 centimetres, dip them in the flour and beaten eggs and fry them in plenty of olive oil.

5. Drain the slices well and sprinkle with sugar and cinnamon.
