Portuguese Kale Soup

Kale Soup with Chouriço is one of the most iconic and comforting dishes in Portuguese cuisine, celebrated for its simple, authentic flavour and rich tradition. Made with potatoes, finely sliced kale, and smoked chouriço sausage, this Portuguese classic has delighted generations and is a staple at family gatherings, traditional festivities, and cosy evenings.

Preparation

1. Peel the potatoes, onion, and garlic cloves, and cook them in about 1.5 litres of water seasoned with salt, a drizzle of olive oil, and the chouriço sausage.
2. Meanwhile, prepare the kale by washing it well and slicing it very finely into thin strips.
3. Once the potatoes are fully cooked, remove the chouriço and mash the potatoes, onion, and garlic until smooth and creamy.
4. Return the soup to the heat and, about 10 minutes before serving, add the kale to the boiling broth. Cook uncovered until the kale is tender.
5. Adjust the seasoning and add the remaining olive oil.
6. Slice the chouriço and place one slice in each serving bowl.
7. Serve the caldo verde hot with slices of cornbread on the side.
