CompareDestemmed and crushed, 12 hours pre-maceration fermentation at 34ºC to increase enzyme function; pre-selected yeast; alcoholic fermentation at controlled temperatures (22-24ºC); light remontage (pumping over). Deep garnet colour. Very aromatic with notes of blueberries and blackberries Full-bodied and concentrated but very fresh with ripe and round tannins. As on the nose, very scented with the same notes of blueberries and blackberries. Very long lingering finish. Storage Lying down at a temperature of 15°C. Serve at a temperature of 16°C to 18ºC.It pairs well with game, roast meats and mild soft cheese.
