Red wine with a deep ruby red colour. Aroma with notes of red fruit jam, lightly spiced, and well-integrated wood notes. On the palate, it is intense, with good structure, ripe fruit, and chocolate, with a long and persistent finish.

Food Pairing
It pairs perfectly with red meat dishes, grilled, roasted, and stews. Also with octopus and roasted cod. Hard sheep and goat cheeses.

Vinification
Traditional fermentation with selected yeasts in a fermentation tank with controlled temperature at 24°C. Inoculation of selected yeasts, periodic pump-overs, and delestage for oxygenation and polyphenol extraction. Malolactic fermentation simultaneously with alcoholic fermentation through inoculation of lactic acid bacteria.

Barrel Aging
1 year in 300 L barrels, used French oak.
