Regular low cylindrical shape (plate), with light bulk on the upper face, being more sentenced later. Fine cross, smooth, well formed, straight yellow and uniform. Closed paste, white or slightly yellow, uniform, with few “eyes” and butter texture. Maleable consistency, allowing some floating (to the touch). Soft, clean and slightly acidulated bouquet.
