A complex, fresh, moderately fruity oil of green and ripe olives, with marked notes of olive leaf and fresh grass and soft notes of green apple and green tomato. Medium bitter and spicy, it lingers in the mouth with a finish of pecans. Resistant to high temperatures, it is ideal for preserving raw or cooked foods.
