Manual harvest, followed by cooling the must to 12ºC. Direct pressing of the whole bunches, with low pressure. Must selection for exclusive fermentation in stainless steel tanks. Internship on fine lees for 6 months. The production obtained in the vineyards is vinified in Monte dos Pinheiros, an estate with one of the most modern wine cellars in Portugal and a production capacity of more than six million bottles per harvest. The institute’s most special wines are matured in a historic and sacred place, Adega da Cartuxa, located at Quinta de Valbom, on the outskirts of Évora. Completely surrounded by vineyards and with charming wine tourism, Adega da Cartuxa is a must-visit for anyone going to Évora.
