Choriza is a sausage made with fresh meat, from the leg and belly of Field-Raised Bísaro Pig, chopped and seasoned with paprika, bay leaves, garlic and salt. It can be consumed cooked or raw, when it is dry, or even roasted over coals in alcohol or brandy.
