Although alheira derives from alho and was once used to describe any sausage seasoned with it, not all present-day alheiras contain garlic, though it is still a common ingredient. To harmonize with Alheira de Mirandela, the best option is red wines, which have good acidity, to soften the fat of the dish and enhance the garlic and spices.
