HOW TO PREPARE AN AUTHENTIC BRAZILIAN FEIJOADA

Feijoada is, without a doubt, one of Brazil’s most traditional and beloved dishes. Rich in flavour, history, and culture, it brings together simple ingredients in a preparation full of personality. A Bit of History

Feijoada has its origins in Brazil’s colonial period and has become a symbol of unity and celebration. Traditionally served on Saturdays, it’s perfect for gathering family and friends around the table.

Traditional Ingredients

To make a truly Brazilian feijoada, you will need:

Meats (available at Delicias UK):

  • Knuckle (Pá)
  • Bacon
  • Smoked Ribs
  • Smoked Ear
  • Smoked Pork Shoulder
  • Pork Chorizo 

Other ingredients:

  • black beans
  • bay leaves
  • onion, chopped
  • garlic, crushed
  • Salt and black pepper to taste
  • Olive oil or cooking oil for sautéing

How to Prepare

  1. Desalt the meats

Cut the salted meats into pieces and soak them in cold water for at least 12 hours, changing the water 3 to 4 times. This helps to remove the excess salt.

  1. Cook the beans

Rinse the black beans thoroughly and cook them in a pressure cooker with bay leaves for about 25 to 30 minutes, until tender (but not falling apart).

  1. Cook the meats

In a separate pan, start by cooking the tougher meats (like carne-seca and pork ribs). Then add the sausages and pork loin. Cook everything together for about 40 minutes, or until the meats are very tender.

  1. Combine everything

Add the cooked meats to the beans and let it all simmer together for another 30 minutes over low heat, stirring occasionally to prevent sticking.

  1. Sauté the seasonings

In a frying pan, heat the olive oil and sauté the garlic and onion until golden. Add this to the feijoada and stir well. Adjust the salt and pepper to taste.

Classic Side Dishes

To complete your meal, serve with:

  • White rice
  • Seasoned farofa (toasted cassava flour)
  • Sautéed collard greens
  • Sliced oranges
  • Hot sauce (if you like a spicy touch!)
