CANJIQUINHA

Canjiquinha, also known as “quirera” or “xerém” in different regions of Brazil, is a traditional dish made from ground corn kernels (similar to coarse cornmeal) that are cooked until soft and creamy. This hearty dish is typically combined with flavorful ingredients such as pork, sausage, or chicken, and is especially popular in the states of Minas Gerais and São Paulo. The dish is known for its comforting, rustic flavours and is often served as a main course.

 

INGREDIENTS

1kg of pork ribs

200g smoked sausage

6 cloves garlic, crushed

1 large onion finely chopped

1 cube of bacon

3 tomatoes, skinless, chopped

1 1/2 cup of washed canjiquinha

Salt and pepper

Bay leaves

 

DIRECTIONS

1.One day before, season the ribs with garlic, salt, pepper and juice of 1 lemon

2.Fry the ribs in 1 cup of tea oil

3. Once fried, remove the ribs and discard the oil

4. In the same pan, brown the sausage in cubes, fry the onion, add the tomatoes, the fried meat and the bacon

5. When boiling, add the canjiquinha with 500 ml of water

6. Allow to boil and lower the heat.

7. Add water, gradually, until the meat is very tender.

8. Season the salt and serve immediately
