The palhais rústico cheese comes from queijo saloio, cured, hard, has a cylindrical shape. Thin, uniform shell, without cracks, dark brick in color. The tightly bound paste, without cracks, has an ivory white color with some irregularly distributed eyes. It has a characteristic aroma of pepper.
